Whilst spreadsheet driven big swiss chocolate brands produce internationally in huge quantities, this is all about recollection. About going back to the basics: relying on the most delicious beans one can source, applying true craftsmanship & time. Nothing else. No scalability. No tricks. Just hand made chocolate, intensely pure, seducingly delicious. We love everything our friends at Garçoa Chocolate produce, so you can imagine how much fun we had tasting various chocolate/wine combinations together (during work hours!)! We were hunting for pairings of course, chocolate/wine matches which would lift the experience onto yet another level. One immediate favourite: combining this year’s X-mas special edition with our “cherry wine” made by the fruit wine pioneers of Frederiksdal: Danish Cherry Wines & Juice.
Why? The spice of the chocolate, the intensely chocolatey flavours get hugged by the equally intense cherry flavours of the wine. The subtle sweetness of the cherry wine and the low sugar content of the chocolate fit perfectly well together… a heartwarming, winterly and christmas-sy delight.
